Vanilla & Almond Buns
The most delicious vanilla and almond buns, better than cinnamon… A must for all bun lovers.
Makes 30
50 g butter
5 dl milk
50 g fresh yeast
1 ½ dl caster sugar
2 tsp ground cardamom
1 pinch salt
15 dl plain flour
Filling
150 g butter
1 ½ dl caster sugar
½ dl vanilla sugar
To decorate
1 dl egg
flaked almonds
pearl sugar
- Melt the butter and add the milk, heat to 37°C. Crumble the yeast in a bowl and add the finger warm milk/butter, stirring until the yeast has dissolved.
- Add the sugar, cardamom and salt. Add 11-12 dl of the flour. Kneading it into a smooth dough. Let it rest covered with a tea towel until it has grown to twice its original size, approximately 40 minutes. TIP, pour hot water into the sink and lower the baking bowl into it.
- In the meantime, mix the ingredients for the filling using an electric whisk.
- Split the dough into two equal shares, using a rolling pin roll each piece into a square about 3mm thick. Spread the filling over the dough squares and roll up from one end. Cut each roll into 15 equal slices. Place the slices on a baking sheet. Cover them with a tea towel and let them rest until they have grown into twice their size, approximately 30 minutes.
- Set the oven to = 225°C.
- Mix up the egg in a bowl and brush over the buns, sprinkle with flaked almonds and pearl sugar. Bake for 10-12 minutes until golden brown.
