Dark Chocolate & Pistachio Cookies
These cookies are delicious! The sea salt and dark chocolate together with the pistachio nuts is such a super combination. They have a slight crunch with a softer middle. We love them with a cup of coffee after a long doggy walk in front of the fire.
Makes 18.
100g butter
100g light brown sugar
75g caster sugar
1 large free-range egg
2tsp vanilla sugar (found in Scandinavian stores) or use 1tsp vanilla bean paste but add this together with the eggs.
175g plain flour
100g shelled unsalted pistachios, chopped
150g dark chocolate with sea salt, chopped
- Heat the oven to 170ºC. Line three baking sheets with baking paper. In a large mixing bowl, cream the butter and sugars together using an electric mixer, then add the egg and vanilla paste and mix until smooth
- Mix the flour and the vanilla sugar and mix it into the creamed mixture until a dough forms. Finally, stir in the pistachios and chocolate chunks with a wooden spoon, ensuring they are evenly distributed throughout the mixture.
- Divide the mixture into 16 equal portions, then roll these into 3cm balls. Put these on the prepared baking sheets, ensuring you have a space of at least 5cm around each ball. Flatten them slightly with a spatula, then bake for 13-015 minutes until golden at the edges. Leave to cool. Enjoy!
